10 Easy & Delicious Vegetarian Recipes



Whether you are vegetarian or if you just enjoy meat free Mondays here is a selection of some easy, quick to prepare and delicious vegetarian meals.


It can be easy to get stuck in a routine of preparing the same meals. Personally I try limit the amount of shopping that I need to do on a weekly basis.


The benefits of eating whole foods and a minimally processed diet has so many benefits, from the varied amount of nutrients to lowering rates of heart disease and type 2 diabetes.


These are some of the things I do to plan for meals of 'awesome':


  1. Keep some recipes (like below) available for reference

  2. Choose two or three that you would like to try

  3. Plan your shopping list - you can also include frozen vegetables / tinned options such as beans, lentils etc. Use my 'Ideas for the Pantry' list below.

  4. Most importantly enjoy!

These are some of the pantry staples that I keep stocked that will generally make it easy to put some healthful meals together.
